Recipe of the Week: Clean Protein Brownies

Brownies full of fiber and loaded with veggies that actually taste good sound too good to be true, right? Wrong! These simple brownies are both delicious and moist thanks to my good friend the Zucchini. Yep I said it, the main ingredient in these brownies is zucchini.



I'm a huge lover of two things: fitness and food. These two things can sometimes conflict with each other; unfortunately we can't all go around eating candy and brownies all the time and still stay in shape.  This is why I'm constantly looking for new ways to combine my love for staying healthy and still enjoy the occasional healthy treat without the guilt. 

So for anyone who is looking to stay lean, get lean, or just cut down on processed junk, here are some ridiculously tasty clean brownies:

Zucchini Brownie Ingredients
  • 1 extra large zucchini (at least 200 grams)
  • 2 Scoops Chocolate Protein (I use Pro7ein Synthesis from Nutrishop)
  • 1/3 Cup unsweetened cocoa powder
  • 1/2 cup Splenda (you can substitute for honey, agave, or stevia if splenda isn't your thing)
  • 1 whole egg & two egg whites
  • Vanilla extract
  • Baking powder
  • Optional: 2-3 tbsp oat flour (this helps make it more dense, but it's not necessary) 





Directions
  • Preheat oven to 400 degrees
  • Put zucchini in a food processor until it is finely chopped, add in eggs, protein powder, sweeter, and cocoa powder and continue to blend together. 
  • Add in baking powder and vanilla extract (optional also add in unsweetened milk substitute and oat flower)
  • Pour mixture into a PAM covered baking pan and cook for 15-20 minutes, or until the top has formed a nice smooth coating and the inside is firm
  • Allow to cool before serving
