Cooking with Kels: Clean Meringue Cookies

Egg White Cookies

Hey Everyone! Since we're heading into the weekend when temptations can get pretty crazy, I thought I'd share one of my super clean recipes to help curb those cravings. This one is amazing for those days when you really want something sweet but don't have any extra carbs or fats to spare. The best part is that it only really takes three ingredients and they taste like no-carb snicker doodles. I keep them pretty basic; just egg whites, cinnamon, and splendid but you can add in just about anything if you're in the mood for different flavor varieties.  These are great for anyone on prep or a super restrictive clean program. 

Here's all you have to do:
 First, preheat your oven to 250 degrees.
Next, crack your eggs and put all the whites into a mixing bowl
Get out your electric beater (I've used a whisk and done this by hand in the past, if you do it like this... you're my hero 'cause it's definitely an arm workout)
If you use the electric beater, turn it up to high and whisk the egg whites for about ten minutes (for those using your whisks, put on some Netflix and get comfy because you'll be whisking for a while).
Eventually, the egg whites will start to form a thick foam.
At this point, add in your cinnamon, extracts, zest, Splenda, etc. and blend it in. 

Now you have two options, either place the mixture into a large zip-lock bag and cut a hole at the tip so you can squeeze out these perfect circular cookies, or grab a spoon and dollop the "batter" onto some parchment paper.
 Put them into the oven for about 25 minutes or until they are lightly golden and enjoy.
 I like to top mine with extra cinnamon,Walden Farms, or Adam's  Peanut butter. 

You will need 
Egg Whites (I used 4)
Cinnamon (as much as you want)
Splenda/Stevia drops/truvia/etc. 
parchment paper
PAM

Optional
lemon/orange zest
vanilla extract
almond extract
peppermint extract... (peppermint cookies for Christmas?)
Coconut shavings
PB2 (peanut butter cookies anyone?)
Unsweetened cocoa powder



*Note: recipe works best with real egg whites, for some reason the carton versions don't firm up as well
