Healthy Snicker's recipe! What?

Happy New Years My Loves! Okay, so it's halfway thru January which means I'm a little late to the party but hey, better late than never! Am I right? Any-who we all know that January is the magical time when the whole world decides that we're gonna get out act's together and get our jiggly booties in shape. Gyms are packed, pastries are in the trash, and every juice cleanse is sold out for miles. So I thought I'd chime in with something a little less boring and give you a little healthified twist on everyone's favorite naughty treat. That's right ladies and gentleman, I give to you... healthy...er Snickers! 

Now, let me start off by saying that these babies, while healthier and filled with way less processed gross stuff than the packaged candies, still contain a good amount of calories. This is not something you want to just swan dive into and eat the whole batch in one sitting. One bar at a time guys!

Now that we've gotten that little tid bit out of the way, lets get into the details! Here's what you're gonna do:

Step 1: Take your chocolate chips and coconut oil and place them in a bowl. Then do the exact same thing in a second bowl. Microwave the first bowl in 15 second increments and stir until melted into a smooth consistency, set the second bowl aside because we'll be using that later. Then add in your protein powder. Make sure you don't add the protein to bowl #2 just yet
*Do not microwave the protein or it will get clumpy* 

Step 2: Place a layer of the chocolate mixture in a baking pan. Put in the refrigerator to harden while you make the nougat mixture. I chose to make mine into cupcake molds but to cut them into bars it would be better to make them in a square baking pan. 

Step 3: In a separate bowl combine your melted peanut butter, sugar free jell-o mix, maple syrup, and vanilla extract. Once the mixture is smooth and your first layer of chocolate is firm, go ahead and spread the "nougat" on top of the chocolate for layer 2. Place back in the refrigerator to firm up while you make the peanut mixture.
Step 4: For the peanut mixture combine the honey, syrup, Splenda, and vanilla extract and microwave for about 20 seconds so it's easier to manipulate. Then go ahead and stir in in your peanuts until they are fully coated. 


Step 5: Take that second bowl of chocolate chips and coconut oil that we had set aside earlier and repeat the melting process. Once the mixture is smooth and melted go ahead and mix in your protein powder and use it to top off the snickers bars. Refrigerate for about an hour until they are completely firm.

Geek Note: Fats metabolize much slower than carbs or protein so it's often recommended to eat some healthy fats (i.e. nuts/nut butters/oils/avocado) and a slow digesting protein before bed to keep your metabolism active throughout the night!


Ingredients:

For the Chocolate Coating:
1/3 cup coconut oil
1 scoop of chocolate protein powder
1 small bowl of dark chocolate chips (I would've preferred to use the Lily's Stevia sweetened)

For the Nougat
1/4 cup of melted peanut butter
1  tbsp sugar free maple syrup
1/4 Package sugar-free butterscotch or cheesecake Jell-O
1 tsp vanilla extract

For the Peanut-Caramel Mixture
1/4 cup sugar free maple syrup
2 tbsp honey
4 tbsp brown sugar splenda
2 tbsp coconut oil
1 tsp vanilla extract
1/4 cup roasted peanuts
